"Delicious Homemade Kesar Pista Kulfi Recipe: A Refreshing Twist on a Classic Dessert"

Kesar Pista Kulfi is a delicious Indian frozen dessert made with rich, creamy milk, saffron (kesar), and pistachios (pista).
Here's a simple recipe to make it at home:
Ingredients:
4 cups whole milk
1/2 cup sweetened condensed milk
1/4 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands (kesar), soaked in 1 tablespoon warm milk
1/4 cup finely chopped pistachios (pista)
Instructions:
In a heavy-bottomed pan, pour the whole milk and bring it to a boil over medium heat. Stir continuously to prevent the milk from sticking to the bottom of the pan.
Once the milk comes to a boil, reduce the heat to low and let it simmer. Keep stirring occasionally to prevent the formation of a skin on top.
Simmer the milk until it reduces to about half of its original volume and becomes thick and creamy. This process can take about 30-40 minutes.
Add the sweetened condensed milk, sugar, and cardamom powder to the thickened milk. Stir well until the sugar is completely dissolved.
Add the soaked saffron along with the milk it was soaked in. Stir well to incorporate the saffron into the milk mixture. The saffron will give the kulfi a rich golden color and a subtle flavor.
Let the mixture simmer for another 5-10 minutes, stirring occasionally.
Turn off the heat and let the mixture cool down to room temperature.
Once cooled, stir in the finely chopped pistachios.
Pour the kulfi mixture into kulfi molds or small disposable cups. If using cups, cover each cup with aluminum foil and insert a popsicle stick into the center of each kulfi.
Place the kulfi molds or cups in the freezer and let them freeze for at least 6-8 hours, or overnight, until completely set.
Once the kulfi is set, remove it from the molds or cups by briefly dipping them in warm water to loosen the kulfi. Serve the Kesar Pista Kulfi immediately and enjoy its creamy texture and rich flavors!
