Ingredients:
• 1 cup Blueberries
• 2 Bright yellow bananas
• 1 cup Kiwi
• 1 Lime about 3 tablespoons
• 1/4 cup Mint Leaves
• 2 cups Strawberries
• Optional add-ins: nuts (such as almonds, walnuts, or pecans), dried fruits (such as cranberries or raisins)
Instructions:
Rinse the quinoa thoroughly under cold water to remove any bitterness.
In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until all the water is absorbed and the quinoa is tender. Remove from heat and let it cool.
While the quinoa is cooking, prepare the fruits by washing and chopping them into bite-sized pieces.
In a small bowl, whisk together the honey or maple syrup, lemon juice, and lemon zest to make the dressing.
